The majority of chickens raised in this country both in commercial operations and on small
farms are a Cornish-Rock cross which have been bred for maximum gain in the minimum
time. The difficulty with this breed is that they grow too fast with bone development lagging
behind muscle development resulting in animals that cannot stand.
For the time being we also will be raising Cornish Rock cross chickens until we can find a
heritage breed that is easily accessible and meets our requirements. However we reduce
the protein intake in the feed and with the exercise that pasture pens will allow we do not
have the leg problems seen in some operations.
Our chickens are raised from 9-11 weeks of age and will finish between 5 -8 lbs, a nice
roaster for a Sunday dinner. We will start production in June with our first chickens available
in September and the second batch available in October. At this stage we are only
producing 40 to 50 chickens for outside sale.
Our chickens are processed at a local government inspected facility and can either be flash frozen or fresh. Jointing the
chicken into pieces can be arranged for an additional cost.
Our 2011 price for whole, processed chickens is $4 per pound dressed weight. We do have an extended waiting list for 2011
birds so at this stage cannot guarantee availability. We will place your name on a reservation list.
